A GFCI constantly monitors the electrical current flowing through a circuit. Under normal conditions, the current flowing out on the hot wire should exactly equal the current returning on the neutral wire. If even a tiny imbalance is detected (as little as 4-6 milliamps), the GFCI trips and cuts power in about 1/30th of a second.
That imbalance means current is leaking somewhere it shouldn't be - possibly through water, through the sauna structure, or worst case, through a person. The GFCI shuts things down before anyone gets seriously hurt.
